Re "elements of variable capital":

In addition to the section from Volume III being discussed, 
Marx also used this expression in Volume I, Ch. 30, 1st 
paragraph.  In that context, it referred to  "means of 
nourishment", but it could be taken to mean - more generally -
means of subsistence for wage-workers.
